Ok, I admit that before turning vegan any sort of cream liqueur was a Christmas treat too good not to indulge in! Although I don’t mind a Baileys Almande, it’s not quite as creamy and luscious as the original, I yearned after something creamier, tastier and altogether more festive feeling! In truth I wanted a vegan baileys!
Imagine how happy I was to stumble across this recipe on www.yumsome.com It’s so easy to make and utterly delicious. It is much nicer than any shop bought version I’ve come across. Oh and of course the added bonus of it being chocolatey too!
For this recipe you will need:
- 100g vegan chocolate hazelnut spread – I used a shop bought version but yumsome has a recipe for that too!
- 100g 65% dark chocolate
- 50g sugar
- 500ml non-dairy single cream
- 400ml vodka
Gently melt the hazelnut spread, chocolate and sugar together. (I melted mine in a bain-marie, basically a bowl over a pan with a small amount of boiling water in it – be careful not to burn it) Once melted take off the heat and mix in the cream and vodka et voila! That’s it! Simples! Pour into a sterile bottle and keep in the fridge. This is the vegan Baileys I had been waiting for!
To sterilise a bottle wash in hot soapy water and then rinse. Place on a sheet of greaseproof paper in a low oven for about 30 minutes. Allow to cool) The bottle should be about the same temperature as the liquid you are pouring into it.)
