Truffles are bite-sized confections usually made from a mixture of melted chocolate and warmed cream, in this recipe soaked raw cashew nuts are used instead of dairy cream and cocoa powder and cacao butter are used instead of chocolate.

- 120 g raw cashew nuts. Firstly soak in cold water overnight or in boiling water for 15 minutes
- 20 g cacao butter ( I bought mine online, but you should be able to get it in health food shops or large supermarkets if you prefer)
- 2 heaped teaspoons cocoa powder
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Cocoa powder for dusting
- Begin by draining the cashews. Put in a food processor together with rest of the ingredients
- Blitz until completely smooth
- Chill in the fridge for at least 2 hours to harden
- Sprinkle cocoa powder onto a plate
- Make teaspoon-sized balls of the mixture, then use your hands to roll the mixture in the cocoa powder
